Homemade Chicken Tacos    
I made tacos for the first time ever on my own tonight. They were so much easier than I thought they would be. I didn’t even burn myself, and I didn’t burn the tacos, which I was sure would happen at least once.
When my family would make chicken tacos, they would add cooked potatoes to the chicken. It was a way to make the chicken stretch, allowing them to feed more people. When I was younger, I really didn’t like potatoes, so I wasn’t a huge fan of their chicken tacos. Over the past 6 years, my taste buds changed, and I now embrace the potato in all it’s many forms. I love them, so I naturally learned to love my family’s taco recipe.
Even though I don’t need to make my chicken stretch (being that I was only feeding Mike and I), I decided to add the potatoes anyway. I was pleasantly surprised too. They tasted just like my mom and nana’s tacos. They were great. They didn’t get soggy, and the bottoms didn’t break open either. I was very satisfied with my dinner.
Mike on the other hand was a bit of a downer to my cooking ego. I guess his family didn’t add potatoes to his tacos growing up, so he wasn’t used to that style. He burned his mouth his first bite, which he does a lot, so I wasn’t surprised. He said that being that I fried the shells after they were already stuffed, the potatoes were extra hot. I love that, but I guess he didn’t. He also salted about every bite he took after that. I thought they had the perfect amount of salt, He also admitted later to not liking the potatoes.
I’m a bit bugged, but like I told him, there’s a simple solution to the problem: I just won’t make him homemade tacos anymore because I’m happy with my recipe, so it’s not changing. I don’t think he liked that, but I didn’t like that he was “hating” on my tacos! :-P 
I have a lot of chicken left over, along with tortillas, so I know what I’m cooking for dinner tomorrow. Just because I’m not making tacos for him anymore, doesn’t mean I can’t make them for me. I’m not sure what Mike’s eating, but I’m sure he’ll figure it out……. haha. That taco head.
